When Matt and Janelle Vogel reopened Club TEN in 2022, the restaurant served traditional pre-formed burger patties. A conversation with Mark and Dusty Poeschel of Back 40 Beef inspired them to begin sourcing locally raised beef.
Using local beef meant rethinking the entire burger. The result was the smashburger we serve today: beef smashed on the grill to create crispy, caramelized edges while keeping every burger flavorful and satisfying.
The change wasn’t immediately embraced by everyone. In a rural Wisconsin community accustomed to thick, juicy burgers, the smashburger was something different. But once guests tried it, they kept coming back.
Over time, it became our burger.
Club TEN was honored to receive nominations in the Wisconsin Beef Council’s Best Burger Contest, which celebrates 100% beef burgers served by restaurants throughout Wisconsin.
For us, the nomination represents more than a competition. It celebrates locally raised beef, a partnership with a nearby farm, and a community willing to try something new.
Club TEN’s smashburgers have also become a popular sight—and smell—at festivals throughout the area.
Guests can watch the locally sourced beef hit the hot griddle, hear it sizzle, and smell the burgers cooking before taking that first bite. It turns a simple burger into an experience and has introduced Club TEN’s smashburgers to people from communities throughout Western Wisconsin.
Many festival guests have gone on to visit Club TEN in Durand to enjoy the burger again—along with our full menu, bowling lanes, and family-friendly atmosphere.
